Given that I'm about as talented in the kitchen as Michael Jordan proved to be on the baseball diamond, I'm just about the last person who should be passing along recipes. But, considering that the pancake recipe I'm about to offer is so incredibly easy, not to mention so very healthy, I'm going to go for broke and try anyway . Here goes ...

High-Protein Pancakes (recipe source: Maximum Fitness magazine)

  • 1 cup large-flake oats
  • 30g protein powder
  • 1/4 cup egg whites
  • 1/2 tsp ground cinnamon
  • 2 tbsp applesauce
Combine the oats, protein powder and cinnamon in a large bowl and mix well in the center. Add the egg whites and apple sauce, stirring everything until smooth. Heat a nonstick pan over a medium-high heat and coat with nonfat cooking spray. Next, pour the batter in the pan and brown on both sides (about one minute each side). Serve with no-sugar maple syrup.
