HEAD CHEF Gill Meller and Steven Lamb, our head of events, recently took a break from a rain-sodden River Cottage Cookery School to chat about their recent trip, along with Hugh, to the recent MAD Symposium in Denmark. The two-day event was assembled by chef René Redzepi of the famed restaurant Noma, at Refshaleoen in Copenhagen. The pair, together with foraging expert John Wright, will return this weekend for the Viking Festival Samsø, where they'll prepare a Viking feast with a River Cottage twist to celebrate the arrival on the island of the world's largest reconstructed Viking ship; Havhingsten from Glendalough. The island of Samsø, home to only 4,300 people, is an old Viking meeting place nine miles off the Jutland Peninsula in Denmark. One thing that makes the place so remarkable, besides its Viking links, is that 100% of the island's electricity is generated by a renewable energy source: wind power. Watch the video > |
