Join us in our award-winning Cookery School for an introduction to artisan cheese. Learn how to make your own with our new course tutor, Paul Thomas.

Paul is a dairy scientist, raw milk cheesemaker and all round fromage fanatic. After graduating in 1999, Paul spent several years working as the affineur at respected cheesemonger, IJ Mellis in Edinburgh. In 2013, with his wife Hannah Roche, he set up Thimble Cheesemakers, producing two raw milk soft cheeses: Little Anne and Dorothy. 

You’d brie mad not to book (sorry we couldn't help ourselves!).
