JANUARY'S a proper winter month, without December's distracting festivities and February's battle against the gloom and dispondency. It's the month to ask yourself  what really thrills you from the winter repertoire. It's a good time to make creative space for any number of under-valued winter vegetables. Think particularly of winter roots. Secret sprout lover? Now's the time to indulge your passion. Treat yourself to one of those classic carnivorous comfort dishes with bones to gnaw at such as oxtail stew, braised lamb shanks or shin of beef. Scrumptious recipes below.
