JANUARY'S a proper winter month, without December's distracting festivities and February's battle against the gloom and dispondency. It's the month to ask yourself Hugh Fearnley-Whittingstallwhat really thrills you from the winter repertoire. It's a good time to make creative space for any number of under-valued winter vegetables. Think particularly of winter roots. Secret sprout lover? Now's the time to indulge your passion. Treat yourself to one of those classic carnivorous comfort dishes with bones to gnaw at such as oxtail stew, braised lamb shanks or shin of beef. Scrumptious recipes below. Just the type of servings craved by Hugh's Three Hungry Boys, who continue their energyshare-inspired adventure on Channel 4 this coming Sunday. Watch the trailer and set your reminders. The trio will be on hand to chat about their time with Daisy at our Get Growing in Spring event in March. They'll join the River Cottage gang off the telly for a fantastic weekend of family fun here at Park Farm, where the TV series is filmed. Tickets are only £14.50 while Under-12s go free. And don't forget Valentine's Day is less than a month away - head chefs Gill, Tim and Joe and their amazing teams are putting their passion for fine dining into their Valentine's feasts. With two engagements and a string of beautiful weddings at River Cottage last year, Hugh's the new Cilla Black.

A grate cheese course at River Cottage?

Our hands-on, cheese making one-dayer will teach you how to create a variety of delicious soft cheeses, including a camembert, mozzarella and a lemon cheese to wow your friends and family. Soft cheeses will provide the focus of the day, while we'll cover the theories behind hard cheese to arm you with all the know-how you'll need to make your own, whenever and wherever you want to.
