Wild Food Cookery with River Cottage
Extend your repertoire beyond the usual farmed fare and join River Cottage for a day of wonderful wild treats.
This course varies with the season, but you’re likely to spend the morning plucking and de-breasting a wood pigeon and foraging the River Cottage farm for edible hedgerow treats- before sitting down to enjoy a smoked pigeon and wild harvest dish that you’ve created.
In the afternoon you’ll cover skinning and curing rabbit, mushroom foraging, panna cotta with foraged berries and herbs and also create a dazzling seafood starter.
The course ends with a sumptuous wild food feast, including dishes you’ve worked on that day.
