Learn to love the best, underrated meat cuts and offal, with a day of hands-on slow cooking on our brand new cookery course - Cunning Cuts.

Here  at River Cottage, nothing is wasted and everything is celebrated. In this one-day course, you’ll learn how to prepare and enjoy some of the least expensive, but most rewarding cuts of pork, beef and lamb. Our expert tuition in the art of cooking these lesser-used cuts of meat will send you home with some fabulous dishes up your sleeve.

Thursday 2 February will be the first day of the new Cunning Cuts course and Hugh is so excited he is planning to attend. He will be there to welcome you at the beginning of the day and talk about how and why he and Gelf developed the course. He will not be teaching the course but will make time to sign books etc if you would like. It is likely he will need to leave mid-morning
