Looking out of the window at the rolling green fields, it is hard to believe that just a week ago the whole of River Cottage HQ was under a foot of snow.

Today, the fields and hedgerows are beginning to offer up their bounty, and the first forage of wild garlic has been enjoyed in the River Cottage Kitchen. Keep your eyes open for this wonderful plant; fantastically scented it provides a whole new level of flavour to a host of dishes. For inspiration, visit the recipe section of our website.
