Hello from Hugh, news and recipes in the October newsletter

Hello,

I've been lucky, over the last few years, to be able to take my passion for the environment into new areas. In 2016, I travelled to Mozambique to uncover some disturbing facts about the illegal ivory trade. And last month I returned to Africa, this time to Rwanda, to learn about the mountain gorillas living there in the stunning Volcanoes National Park. It was a happier experience than my earlier trip: although these gentle giants are critically endangered, there is hope for them, thanks to the work of wildlife charity Fauna & Flora International, with whom I'm delighted to be collaborating. Seeing the gorillas at close hand was a truly exhilarating, never-to-be-forgotten experience. And learning about their crucial role in the mountain eco-system brought home to me the importance of the fight to save them. To find out more, see fauna-flora.org.

I returned home to a garden full of good things – celeriac and kale, beetroot and raddichio, apples, pears and autumn raspberries – and I've been having a great time coming up with new ways to use them all. If you caught me on Saturday Kitchen last Saturday, you'll have seen me cooking up a delicious early-autumnal salad of char-grilled roots, fruits and leaves. Autumn veg responds so well to the heat of the grill and I definitely recommend you try it!

Feast well in October, and I'll be back next month,

Hugh
