The 17th River Cottage Handbook, Outdoor Cooking by Gill Meller is released today. 
 
In Outdoor Cooking, Gill explains every aspect of cooking out in the open. He will take you back to basics with a guide to building the perfect fire, and reinvigorate your summer barbecue by cooking bread on it, grilling Indian-style kebabs, smoking fish or roasting succulent joints of meat. You can also find out how to make the most of a pizza oven or Kamado-style clay barbecue and, if you're feeling adventurous, there are comprehensive instructions for spit roasting larger pieces of meat or making a smouldering earth oven.

RECIPE: Grilled beetroot with labneh and dill
Cooking whole beetroot over a hot fire crisps and darkens the skins while sweetening and softening the flesh. I find it works best with new season beetroot, just give them a quick scrub and chuck them on the grill, leaves and all. They only take 30–40 minutes to cook. Served with herbs, lemon and labneh, they are delectable.
